Since our beef have never eaten grain, the important Omega 3 fatty acids (which are found in VEGETATION) are consumed and the cows then build that into their meat. This is the fatty acids we NEED in our diet. Once cattle are fed GRAIN, that turns to Omega 6 fatty acids which are BAD for you. All of our beef are raised just down the road at Providence Farms in Bee Branch, Arkansas. We source our South Poll Beef directly from the ranch that created them in Alabama. This beef has been bred over the last 30 years to create the superior beef in America. They brought together 500 each of four breeds (Angus, Hereford, Senepol and Barzona) to build a slick-haired, small-framed cow with an emphasis placed on high fertility, longevity and calm disposition. South Polls are bred to excel on grass based grazing. Ultrasound and actual carcass data tells us that South Poll are superior to English cattle for tenderness. They get the benefit of the marbled muscle from the angus while having a higher meat to bone ratio. We dry age our beef for 3 weeks to create a superior, robust flavored meat. this process also helps the tenderizing process of the meat. try it today.
